Mushroom Pâté with Roasted Garlic

A good pâté trades on three things: the depth of the central protein, the fat that emulsifies the texture, and the brightness of the brandy or wine that cuts through the richness. This version uses a deeply-browned mushroom mixture as the protein, butter as the emulsifier (vegan version uses olive oil + cashew cream), and brandy + sherry vinegar to lift the finish. The technique borrows from classical liver pâté — slow caramelize the mushrooms past the water-release phase, deglaze with brandy, build a fond, blend until silken, season with care. The result is spreadable, velvety, with the same satisfying density as a duck-liver mousse but vegetable-forward. Serve on toasted baguette with cornichons and grain mustard; or on water crackers; or stirred into hot pasta as an instant umami sauce; or thinned with a splash of pasta water as a dip. It keeps 1 week refrigerated under a thin layer of olive oil; the oil layer creates an anaerobic seal that extends shelf life and adds a small finishing flavor.

Method

    Roast the garlic. Heat oven to 400°F. Slice the top off the head of garlic to expose the clove tops. Drizzle with 1 tsp olive oil; wrap in foil. Roast 35-40 minutes until cloves are soft and caramelized golden. Cool. Squeeze the soft cloves out of the skins into a small bowl. Discard the papery shells.

    Heat 2 tbsp of the butter in a large heavy skillet over medium-high. Add the diced onion + a pinch of salt; cook 4-5 minutes until translucent. Reduce heat to medium-low and continue cooking 6-8 minutes until pale gold and sweet.

    Add the remaining 2 tbsp butter to the pan. Increase heat to medium-high. Add half the mushrooms (one of the two varieties) in a single layer. Cook undisturbed 3-4 min until deeply golden on the bottom; toss; cook another 3-4 min. Push to one side of the pan; add the second variety to the empty side; sear undisturbed 3-4 min; toss; combine all mushrooms together in the pan.

    Continue cooking the combined mushrooms 4-5 more minutes until the volume reduces by half and the texture goes from raw-mushroom to deeply-browned. This stage is what determines the depth of the finished pâté — don't rush it.

    Add the thyme + rosemary + 1 tsp salt + black pepper + nutmeg. Stir 60 seconds.

    Carefully add the brandy. (Take the pan off the burner if working over gas — brandy can flame.) Return to heat; cook 60-90 seconds until the brandy mostly evaporates. Add the sherry vinegar; cook 30 more seconds.

    Off heat. Add the roasted garlic cloves to the pan. Let cool 5-10 minutes (warm but not hot — full-temp ingredients can break a food processor's plastic seal).

    Transfer the entire pan contents to a food processor. Blend on high for 60-90 seconds, scraping down the bowl, until the texture is silky-smooth — almost like cake frosting in consistency. If too thick to spin, add 1-2 tbsp water or olive oil to loosen.

    Taste. Adjust salt + pepper. The pâté should taste rich + earthy with a sharp brandy note in the finish. If it's too sharp, add a small piece of butter and re-blend; if too rich/flat, add another splash of vinegar.

    Transfer to a small jar or ramekin. Smooth the top with the back of a spoon. Pour the 2 tbsp olive oil over the top to create a thin sealing layer (this excludes air and extends shelf life).

    Refrigerate at least 2 hours before serving — pâté flavors integrate after a rest. Best after 12 hours of rest.

    Serve at room temp on toasted baguette or crackers. Garnish with cornichons + grain mustard on the side.

Notes + variations

  • The brandy/cognac matters. A cheap one produces a sharp, hot finish; a decent one produces depth. You don't need expensive — anything from a $20-30 bottle works fine.
  • Vegan version: substitute olive oil for butter (3 tbsp instead of 4 tbsp). Soak 2 tbsp raw cashews in hot water 30 minutes; drain; add to the food processor with the rest. The cashew cream replaces the butter's emulsifying role.
  • Don't skip the roasted garlic. Raw garlic in pâté reads sharp and acrid; roasted garlic reads sweet and nutty. The 35-minute roast is worth it.
  • Keeps 7-10 days refrigerated under the olive-oil seal. Once you break the oil layer, eat within 4-5 days.
  • Variations: add 1 tbsp truffle oil at the end (light hand — too much truffle reads chemical); add 1/4 cup toasted walnuts for textural counterpoint; substitute Madeira for brandy for a sweeter profile.
