    In a 16 oz mason jar or airtight container, add oats, chia seeds, and a pinch of salt.

    Mash half a banana in a small bowl with a fork until mostly smooth, then scrape it into the jar.

    Add Greek yogurt, milk, peanut butter, vanilla, and honey if using. Stir hard with a spoon for 30 seconds — you want the peanut butter broken up, not a blob on the bottom.

    Seal the jar and refrigerate at least 6 hours, ideally overnight. The chia seeds need the full soak to gel.

    In the morning, stir once. If it looks too thick, splash in 1-2 tbsp more milk.

    Top with fresh banana slices and a drizzle of peanut butter just before eating — do not add fresh banana the night before or it will brown.

Chef's notes

  • Use a very ripe banana (lots of brown spots) and you can skip the honey completely.
  • The chia seeds are load-bearing here — they're what turns the liquid into pudding texture. Don't skip them.
  • Natural peanut butter (just peanuts + salt) works best. Skippy-style will still melt in but adds sugar.

Storage

Fridge 4 days in a sealed jar. Do not freeze — texture falls apart on thaw. Add fresh banana the morning of.
