    Heat a large nonstick skillet over medium-high. Brown the sausage 6-8 minutes, breaking it into crumbles. Transfer to a plate and drain all but 1 tbsp of fat.

    Add diced onion and bell pepper to the same pan. Cook 4 minutes until softened. Add thawed hash browns in a single layer, press down, and let them crisp 5 minutes without stirring. Flip and crisp another 3 minutes.

    Push veggies to the side. Add butter to the empty side. Whisk eggs with salt and pepper in a bowl, pour into the skillet, and scramble soft — 2 minutes, pull them off the heat while they still look a little wet. They'll finish from residual heat.

    Combine sausage, veggies, and eggs in a single bowl. Let cool 10 minutes — hot filling steams the tortilla and creates soggy burritos.

    Warm tortillas 10 seconds in the microwave under a damp towel so they fold without cracking.

    Assemble one burrito at a time: 1/2 cup filling + 1/4 cup cheese in a line across the lower third. Fold sides in, roll tight from the bottom up. Tuck as you roll.

    Wrap each burrito in a sheet of parchment paper first (parchment against the tortilla), then wrap the parchment bundle in foil. This is the freezer secret — parchment stops the tortilla going gummy, foil blocks freezer burn.

    Freeze flat on a sheet pan for 2 hours, then transfer to a gallon freezer bag. Freezes 3 months.

    To reheat from frozen: remove foil, keep the parchment on, microwave seam-side down 2 minutes. Flip, microwave another 1-2 minutes until piping hot in the center. For a crispy exterior, finish 2 minutes in a dry skillet after microwaving.

Chef's notes

  • The cool-the-filling step is the single most important one. Hot filling = steamed tortilla = guaranteed freezer disappointment.
  • Parchment-THEN-foil is the wrap order. Foil directly against the tortilla leaches metallic flavor and causes sogginess.
  • Do not add salsa to the filling before freezing — it makes the tortilla disintegrate. Add it after reheating instead.

Storage

Freezer 3 months wrapped in parchment + foil inside a freezer bag. Fridge 4 days if unfrozen. Reheat 3-4 min microwave seam-side down.
